Sesame Peanut Noodles…

Here’s another cheap, quick, tasty healthy dish, perfect for Summer.

Cook .5 lb spaghetti for 2 people

Mix together the sauce in a bowl..use some raw garlic, 2 T of chunky peanut butter, some soy sauce, orange juice, sesame oil, roasted unsalted peanuts, and vinegar. (I used rice wine vinegar and sweet black rice vinegar.)

When the sauce tastes right to you, toss in with the cooked spaghetti. Put it in the fridge for 15-20 minutes to cool. Then chop and add whatever veggies you have in the fridge. I used carrots and red grapes. Toss, then add some mixed greens at the end. If you have a farmer’s market in your town, get some greens there. They keep well in the fridge and give the dish some nice bitterness and texture.
