Goat Cheese, Vegetable & Bacon Fritatta…

If you’ve got a cast iron skillet, fritattas are a great way to make a cheap, healthy and impressive meal without too much work. For the one above, I included potatoes, zucchini, turkey bacon, cherry tomatoes, garlic and goat cheese. Any combination of things you like will work. Mine was a bit more labor intensive b/c of all those ingredients, but I made life a little easier by microwaving the potatoes first, then cooking the bacon, zucchini and potatoes on the same griddle, one at a time, obv.
Basically, for an 8in skillet, you want to beat 8-12 eggs, then season them w/ a bit of salt and pepper. Heat the skillet to medium and coat it on the bottom and sides w/ butter, extra virgin olive oil, or both. Cover the bottom of the pan w/ your first layer, preferably something solid, which in this case was potatoes and zucchini. Then pour in some egg batter, followed by another layer, here it was bacon. Then next step is important, which is to add a thin layer of bread crumbs, which will absorb moisture and hold the bitch together. Then more eggs. Push a spatula through the mixture lightly, and as it begins to set, run a knife around the edge to pull the eggs away from the pan. After about 5-7 minutes, take it off the stove, cover with cheese and something fresh (here the tomatoes and fresh garlic) and put the skillet in a 375 degree oven for 12-15 minutes. It’s done when it looks cooked, and when you can insert a knife that comes out without being gooey w/ eggs.
